Greek Yogurt Chicken Salad


HERE is the printable recipe.

Ingredients:

  • 1 ½ lbs boneless, skinless chicken

  • 1 cup whole milk plain yogurt

  • 3 stalks celery

  • 2 Tbsp chia seeds

  • 2 Tbsp flax seed

  • ½ Tbsp salt

Optional Add ins:

  • Pecans

  • Dried cranberries

  • Turmeric

  • Diced apples

  • Grapes

  • Etc!

Directions

  1. Place chicken breasts into a medium size pot and cover with water. Boil for about 1 – 1.5 hours until fully cooked and tender.

  2. While chicken is cooking chop celery into bite sized pieces.

  3. Shred chicken – There are 2 different methods to shred chicken

  4. 2 Forks – you can take 2 forks and pull chicken until shredded. This method takes a little longer.

  5. Kitchen aid/blender – put chicken in a kitchen aid mixer on low for 15 seconds.

  6. Combine all ingredients in a bowl. Add in any add ins if you would like.

Note: If everyone in your family doesn't like the same add ins, make the base and allow everyone to create their own.
